Pipe Creek Trail – Daggett County, UT:
This week, Chad and Brett Hermansen are joining the folks from Daggett County as they take you on some of the most diverse and scenic off-road riding that you can experience in the state of Utah. Right next to the town of Dutch John is the Flaming Gorge Dam, and that’s where they start their ride, directly from the visitors center. Quickly climbing up from the dam, the Pipe Creek trail takes you up into the aspen and pine before joining the Spruce Creek trail, which takes you to a small creek which is perfect for a relaxing stop. It’ll be a nice, easygoing day.
Where To: Rock Climbing in American Fork Canyon:
On this week’s Where To Adventure, we’re taking you to American Fork Canyon, an incredible place to go rock climbing, right next to Salt Lake City. It contains over 800 routes for sport climbing, which means that there are bolts along the routes to hook into and help with the climb. The AYL crew tags along with two locals who have been rock climbing for years. They encourage people to come out and have fun, but also take safety seriously. If you’re new to the sport, there are lots of climbing gyms along the Wasatch Front that will teach you everything you need to know in order to be successful.

Katy Yardley is cooking up a mouthwatering meatloaf! This recipe is guaranteed to become a family favorite so check it out!
What you need:
2 lbs Yardley’s Premium Beef
Butter
One large yellow onion – diced
2 large carrots – grated
4 eggs
¼ cup cream or half and half
Worcestershire
Salt & Pepper
Ritz crackers – ground up
Ketchup
Dry mustard
Cane sugar OR brown sugar
Parsley for garnish
Steps:
Preheat oven to 350
In one large pan melt ¼ cup of butter
Then Saute diced onion and grated carrots
Once carrots and onions have softened remove from heat and let cool down
In one large bowl add 2 lbs Yardley’s Premium Beef
add softened vegetables
add 4 eggs
add ¼ cup cream or half and half
add a few dashes of Worcestershire
add salt and pepper
add ground up ritz crackers
then mix well
once well mixed shape as a loaf on your pan (we used a rack with parchment paper)
in a separate bowl for topping add 2 cups of ketchup
add 1-2 Tbsp of dry mustard
add 1-2 Tbsp of cane sugar or brown sugar
mix well and put a small portion on top of your meatloaf
cook in oven for 45 minutes
remove loaf and spread more topping on the loaf
place back in the oven and cook for another 25 minutes
remove and let cool
garnish with parsley then serve!

Red White and Road – Torrey Utah
It is a tradition that started in 2009. Today on At Your Leisure, Chad Ria and the whole AYL crew Ride to Remember with the Steadman Family from Steadman’s Recreation for the 13th Annual Red White and Road Motorcycle Rally in Torrey Utah. For many it is a return event, for some it is a “bucket list” event as it is their first ride on Historic Utah Highway 12. But for one person, it is their first glimpse of Utah beyond the Salt Lake Valley.

On this week’s Where To Adventure, we’re taking you to The Little hole Recreation Area on the Green River to check out the nearby Dripping Springs campsite. With so much to do in such a magnificent area, you’ll want to ensure there’s enough time to enjoy the beautiful water, great fishing and wildlife viewing opportunities topped with some stunning scenery.

Two AYL super fans join Scott Huntsman with their new Electric Hybrid Jeep. He’ll explain what makes the vehicle so unique and effective as an off-road machine, and they’ll demonstrate its capability on the trail.
Along The Way: Mountain Biking at Range Valley Ranch
On This week’s Along The Way, the AYL crew takes you back to Range Valley Ranch. Carbon County High Schools have joined together to form a Composite mountain biking club for students, and Mike Siaparis from Range Valley Ranch gave them the opportunity to construct a trail on his land. Learn about that, and also how private landowners are having an impact on relieving some of the stress on public lands by allowing the public to recreate on their lands.
Host Adventure: Moab Trail Closures with Blue Ribbon Coalition
It has been quiet on the trail closure issue for a while, but with the court ordered review of all travel plans in Utah, some of Moab’s most iconic trails are in imminent danger of being closed permanently. We will look at some of these trails and give you step by step instructions on how you can help stave off this attempt to close 437 miles of trails near Moab.

On this week’s Where To Adventure, we’re taking you on a Rafting adventure down the Green River, not only is it a scenic and exciting experience there’s also amazing history to be seen including fascinating petroglyphs.
What’s New: Jalapeno Au Gratin Potatoes with Katy Yardley
Katy Yardley from Eagles Landing is sharing a mouthwatering recipe for Jalapeno Au Gratin Potatoes. With just enough spice to tickle your tongue without the burn, this delicious meal would be great for your next family meal. Be sure to follow along for all her secrets to make this amazing dish.
Ingredients:
4 Tbs Butter
2 whole jalapenos (diced)
2 cups heavy whipping cream
3 cups half/half
8 oz softened cream cheese (1in cubes)
⅛ tsp fresh ground nutmeg
5 medium russet potatoes (sliced ⅛ in thick)
3 cups shredded sharp white cheddar cheese
1 cup shredded parmesan cheese
Directions:
1. Peel and slice the potatoes, set aside. (If prepping more than an hour in advance, submerge the potatoes in a large bowl or container of water, this will keep the potatoes from oxidizing and changing color.)
2. Preheat oven to 375°F.
3. Melt 2 Tbsp. butter in a saucepan over medium-high heat.
4. Add jalapenos and sauté for 3 minutes.
5. Add heavy whipping cream, half/half, cream cheese and nutmeg. Add salt and pepper to taste. Stir constantly and bring to a simmer. Once it comes to a simmer, remove from heat.
6. Butter the bottom of a deep casserole dish (9inx13in), lay the potato slices down in a single layer, overlapping the potatoes like roof shingles.
7. Slowly ladle ⅓ of the cream mixture over the first layer of potatoes, sprinkle salt and pepper over that, then add 1 cup cheddar cheese on top.
8. Repeat two more times by layering the potatoes, cream mixture, and cheddar cheese.
9. Add the parmesan cheese on top.
10. Spray the bottom side of a sheet of aluminum foil with non-stick cooking spray and cover the baking dish. Put in the preheated oven and bake for 1 hr 15min.
11. After 1hr 15min, remove the foil and continue to bake another 15 min.
12. Remove the baking dish from the oven and allow it to rest for 15-30 min, then serve.

Host Adventure: Boating at Flaming Gorge
Chad and Ria discover that you can still make a big splash, even when we are in a drought, as they “hang” for the end of season boating at Flaming Gorge Reservoir in North Eastern Utah. They stop in on the annual Parade of Lights celebration, which is like celebrating Christmas in September. We will join the party to see the decorated boats on the dock then follow our intrepid sailors out with the locals for a “Leisurely” tour of some of the breathtaking scenes through the Flaming Gorge.

Along The Way: Utah Motorsports Campus Off-Road Track Day
On this week’s Along the Way, the AYL Crew heads to the Utah Motorsports Campus outside of Tooele to check out the Off-Road Track Day. Once a month, this is a day that welcomes drivers of all skill levels to run their machines on the short-course track, perfect for testing the capabilities of side x sides in a safe, controlled environment.

Chad and Ria head to the Bear Lake area to ride around Peter Sinks with Epic Rentals. The Peter Sinks area is famous for registering some of the coldest temperatures in the lower 48 states. And right now is the perfect time to ride because of all the fall colors.

Host Adventure: Monte Cristo Loop
Chad, Brett Hermansen and Scott Huntsman are showing off the fall colors as they get out the road bikes for a beautiful ride through the Monte Cristo Loop. This ride goes through Immigration Canyon, over East Canyon through Trapper Loop then goes over the top of Monte Cristo and comes out at Woodruff before working back down Mirror Lake Highway. It’s easily a full day’s ride but you’ll want to be sure to give yourself enough time to stop and do some sightseeing as the entire ride is filled with spectacular views.
Where To: Navajo Lake
On this week’s Where To Adventure, the AYL crew checks out a great spot for viewing the changing fall colors. The Navajo Lake Lodge is closed for the season, but there’s still some great fishing to be enjoyed under the yellow and orange of the fall foliage. The lava flows, lava tubes, and cinder cones give this part of southern Utah a unique character all its own.

This particular hiking trail offers minimal shade beneath the palms that grow thanks to emerging water from the fault lines and even a glimpse at some of the local wildlife.

This week on AYL Scott and Tonya Huntsman are taking some of their family and friends and heading up to Hardware Wildlife Management Area. Hardware is a great place to get out in the outdoors during the winter months and enjoy some amazing wildlife viewing opportunities as the rocky mountain bull elk migrate to the ranch to feed during the hunting season.
What’s New: Swedish Meatballs with Katy Yardley: (3:53)
Katy Yardley is back in the kitchen and she’s cooking up her version of one of her favorite dishes: Swedish meatballs. She’s using Yardley’s Premium Beef ground steakburger, and to keep it simple and save on the mess, she’s cooking the meatballs in the oven.
Yardley Beef Swedish Meatballs Recipe
Meatballs
2 lbs ground Steakburger
1c crushed Ritz crackers
½ tsp ground allspice
½ tsp ground nutmeg
½ c grated onion
½ tsp garlic powder
¼ tsp black pepper
1 tsp salt
2 eggs
Sauce
4 Tbs butter
4 Tbs flour
3 c beef broth
1c heavy cream
1 Tbs Worcestershire Sauce
2 Tbs Dijon mustard
1 Tbs Better than Bouillon Beef Base
Salt and pepper to taste
1. Preheat oven to 375°F.
2. Combine beef, onion, eggs, and spices in a bowl and mix well (Your hands work best).
3. Roll the beef mixture into balls that are 1 ½ to 2 inches in diameter.
4. Place meatballs on a parchment lined baking sheet, about ½ in apart.
5. Put meatballs in the oven and bake for 25-30 minutes.
6. While the meatballs are cooking, melt the butter in a dutch oven or stock pot over medium high heat. Once the butter is melted, add the flour and stir constantly with a whisk until it begins to turn golden brown (3 to 4 minutes).
7. Add the beef broth ½ a cup at a time while stirring.
8. Add the beef base, mustard, heavy cream and Worcestershire Sauce. Stir to combine.
9. Turn the heat to medium low and allow the sauce to simmer for 5 minutes.
10. When the meatballs are done, (internal temp of 165°F) take them out of the oven and add them to the pot with the sauce. Let them simmer on low for 5-10 minutes.
11. Serve over rice or egg noodles, and they’re even better with a side of lingonberry jam.

This week on AYL Chad and Ria take an in depth look at the new OHV education requirement that started on the 1st of January. They get some great insight into what this free online requirement entails, speak to some industry experts and have a wide range of experience levels in the AYL office sharing their experiences of going through the training. This training is required for all OHV’s including Dirt Bikes, ATV’s, Modified Jeeps or Rock Crawlers, Street Legal and Non-Street Legal SxS’s and must be completed by February 1st.
